I love self-proclamations. For example, I’m the king of the world at “Saved By the Bell” trivia. Seriously, I’ve never lost and I’m still emulating the Zack Morris look at 36. Does anyone know where I can find some of those awesome converse high tops?

If anyone can speak in terms of knowing what goes into a good breakfast burrito, it has to be me. Having grown up by the border, El Paso, I know what’s good and what isn’t good. Especially, when it comes to delicious, mouth-watering breakfast burritos. If you ask me, the perfect breakfast burrito can be either ham or bacon as your meat choice, chorizo is another delicious option, but for the sake of this argument, we’ll stick with the favorites. Followed by fluffy eggs, potatoes, green chili, and of course, salsa. If you don’t provide me salsa to put on my burrito, you may as well throw that thing out the window.

Carrie Underwood swears by this breakfast burrito. It’s a “Big Sur Breakfast Burrito.” Which is basically a vegan breakfast burrito. The eggs were tofu and the imitation meat was not meat! I understand wanting to look good, but this is a stretch, right?

I’ve got a buddy of mine from Illinois that has decided to go vegan but he loves cheese. The guy would bring his vegan substitutions to cookouts and social events whenever we would have them. I decided one day to give one of his grass dogs a shot. I’m not sure if they were made out of grass, but they could have been. After one bite, I knew that I could never do it. I mean, I could do it every now and then, but a lifestyle change? I went to Texas Roadhouse the other night and slammed out some prime rib all by myself!

I’m pretty sure, if Carrie Underwood had a real breakfast burrito every now and then, she would still look fit as ever! Listen, the burrito wasn’t the worst thing I’ve ever had, but I don’t see myself changing teams to vegan over meat anytime soon. I will, however, attempt to go a week or weekend trying nothing but vegan.

Who knows? Maybe it’ll change my life. We’ll see. Any good restaurants and recipes to try?
