Quick and Easy Christmas Cookies and Candy

I did a “little” baking this holiday season.

The Bacardi didn’t go in them but I may have needed a bit after all that. 😂

I divided my goodies up into 40 treat bags to hand out in the office and they were a hit!

I almost felt bad because it seemed like a lot of work but they are super easy recipes.

The Peppermint bark is my favorite to make.

Ingredients:
1 Bag of Hershey’s Candy Cane Kisses
4 squares of Chocolate Almond Bark
Crushed Peppermint Candies

Melt 4-5 squares of chocolate almond bark in the microwave. Stir every 30 seconds until melted.
Let cool until it hardens.
Unwrap your kisses and melt them in the microwave. Stir every 30 seconds until done.
Pour on top of the melted chocolate almond bark.
Sprinkle crushed candy canes on top.

I even cheat and buy a bag of candy canes pre-crushed to save my fingers.

The Crockpot Christmas Candy is even easier.

1 – One pound jar of Lightly Salted Dry Roasted Peanuts
1 – One pound jar of Unsalted Dry Roasted Peanuts
1 – 12 oz. Pack Semi-Sweet Chocolate Chips
1 – 12 oz. Pack Reese’s Peanut Butter Chips
1 – One pound pack of Vanilla Bark

Put it all in your crockpot on low.  After about an hour, stir and then spoon it out onto parchment paper to harden. DONE!

What’s the surprise?  I change up the chips every time and often don’t remember what I used so it’s a surprise even to me!

I’ve used peanut butter chips, salted caramel, white chocolate, funfetti and butterscotch.

I start with a basic chocolate chip cookie recipe:

Dry ingredients:
3/4 cup all-purpose flour
1/3 cup granulated sugar
1/4 cup brown sugar (I used light brown sugar, but dark would work also)
1/4 teaspoon baking soda
1/4 teaspoon salt

4 tablespoons softened butter
1 egg
1 teaspoon of vanilla

1/2 cup semi sweet chocolate chips + 1/2 cup your choice of surprise chips!

Mix your dry ingredients together.
Beat the softened butter and mix in the egg and vanilla.
Add in dry ingredients and blend until cookie dough forms.

Mix in 1/2 cup chocolate chips + 1/2 cup of surprise chips.

My finale treat was a Polar Bear Claw Candy.

The video made it look super easy.  It wasn’t.  I put the caramel mix in the freezer for two hours and when I went to dip them they still immediately melted.

I had to take one out of the freezer at at time.  So before you make these keep two things in mind: your hands and kitchen will be a sticky mess and your friends and family will love them.
